salt does something funny to the protein cells. they turn from tight-assed, stuck-up pricks to totally relaxed, fun-loving, sociable cool dudes. the music is Sade ... and everyone is having a good time. when cooked, the relaxed, tangled proteins trap the liquified fat and meat juice. relaxed proteins also mean t-e-n-d-e-r meat.

That pretty much what I figured. My dad used to salt the hell out of the steaks he cooked, and I never had it in my heart to tell him that I hated it.
